While little ones may find chicken curry to be too spicy, chicken kurma with its mellow and comforting coriander notes is well-loved by everyone and will not be too much for delicate tummies trying out fasting for the first time.

Instead of a takeaway pack from your nearest mamak make your own. In a medium pan over medium heat, add a pack of Ayam Brand™ Kurma paste, saute until fragrant. Add 160g of diced potatoes, 160g of diced carrot and 600g of chicken chunks, saute until medium well done. Add 400ml of water, cover the pan with lid and let it simmer until the chicken and potatoes are cooked. Add two red onions that has been cut into chunks, 160ml of Ayam Brand coconut milk, and bring to the boil. Optional but very pretty, add a garnish of coriander leaves and sliced red chillies. Serve with rice.

A classic Malay favorite for when you’re craving spicy umami flavour. Don’t order out when it is quicker and more delicious to make it yourself.

In a wok heat a tablespoon of cooking oil, and fry up 600g of sliced sirloin beef and remove to drain. Slice two red onions into rings, and dice one yellow capsicum, saute them in the same pan, then pour in one pack of Ayam Brand Masak Merah paste and mix well. Add the meat back in, stir well to coat, and let it simmer for a few minutes for the meat to absorb the flavours. Dish out, and garnish with some Ayam Brand Garden Peas. Serve with hot rice.

Among the most comforting Kampung-style dishes is masak lemak that has a piquant creaminess that is like a warm hug, with a spicy kick. Achieve this culinary effect at home with the Ayam Brand Masak Lemak Cili Padi Paste.

Simmer 800ml of water, Ayam Brand Masak Lemak Cili Padi Paste and three stalks of crushed lemongrass in a pot.  Add 600g of prawns, then bring to a boil until the prawns are just cooked. Add in 600g of pucuk ubi, 800ml of Ayam Brand Coconut Milk, and 6 turmeric leaves that have been thinly sliced. Cook until the liquid thickens into a delicious sauce. Serve with rice.

Nasi Dagang Ikan Tongkol

In a wok, heat the Ayam Brand Fish Curry Paste until fragrant, approximately 3 minutes. Add 600ml of water bring to a slow boil. Add 600g ikan tonggol or for more convenience use two 300gm can of Ayam Brand Mackerel in Tomato Sauce, add 400ml of Ayam Brand Coconut Milk, cover with lid and simmer on low heat until the fish is cooked. Add curry leaves, and allow to simmer for another 3 minutes. Garnish with red chillies and coriander. Serve with white rice, or for more authenticity serve with nasi dagang.

The organising partners have announced plans to make the next event even more significant, pushing Thailand to become the centre of the HoReCa (Hotel, Restaurant, and Catering) business in Asia.

Mr. Phusit Ratanakul Sereroengrit, Director-General of the Department of International Trade Promotion (DITP), Ministry of Commerce, shared the success of the event, stating that the achievement of THAIFEX – HOREC ASIA 2024 was a result of the collaboration among the three partners: DITP, TCC, and KM. Despite being the inaugural event, it received a remarkable response, with 359 companies from 23 countries exhibiting in 722 booths, and a total of 15,851 Thai and international attendees, creating a total order value of THB 3,625 million, surpassing the target of THB 1,000 million. The top five product categories with the highest order volume included dining equipment, technology, the HoReCa World group, food service businesses, and bakery and ice cream. This success reflects the global business community’s confidence in Thailand’s HoReCa sector, indicating positive signs for the recovery of Thailand’s economy and as a driving force for exports and meeting the demands of the tourism industry. This aligns with the Thailand Vision, Thai government initiative, to establish the country as a regional Tourism Hub.

Mr. Sanan Angubolkul, Chairman of the Thai Chamber of Commerce and the Board of Trade of Thailand, added that the success of THAIFEX – HOREC ASIA 2024 demonstrates Thailand’s potential and strengths. Not only is it a top tourist destination, but it is also recognized internationally for its quality products and services, including those in the HoReCa sector. The event featured more than 129 Thai companies in 267 booths, showcasing outstanding design, eco-friendly products, the soft power of Thai creativity, and innovative items. The THAIFEX – HOREC Innovation Awards highlighted these achievements, with three Thai companies winning awards in Furnishing, Tech and Wellness segment. The overwhelming positive response has led to a high interest in booking spaces for the next event.

Mr, Matthias Kuepper, Managing Director of Koelnmesse, revealed that THAIFEX – HOREC ASIA 2024 saw the participation of 230 foreign companies in 482 booths from 22 countries, including from Europe, America, and Asia. Despite being the first event, it garnered satisfactory feedback, with over 1,702 international buyers and participants. The event featured numerous interesting activities, such as cooking demonstrations by famous chefs, the THAIFEX – HOREC Academy with 69 experts sharing knowledge across 36 activities, the THAIFEX – HOREC Xperiential Zone showcasing immersive HoReCa trends, and special events like the ASEAN Barista Championship and the Thailand Ultimate Housekeeping competition, attracting significant attendee interest.

Following this success, the organisers announced preparations for an even grander THAIFEX – HOREC ASIA 2025, promising more highlights and special activities. The event is scheduled for March 5-7, 2025, at IMPACT Exhibition Center, Halls 9–12, IMPACT Muang Thong Thani, Bangkok.
